Rocket & mixed pea salad

Ingredients:
  • 100g snow peas, topped
  • 100g sugar snap peas, topped
  • 42.00 gm fresh lemon juice
  • 36.40 gm olive oil
  • Salt & freshly ground black pepper
  • 1 bunch rocket, trimmed, washed, dried, torn
Instructions:
  • Blanch snow peas and sugar snap peas in salted boiling water until vibrant green and al dente, for 2-3 minutes. Immediately shock in ice water, then drain thoroughly.
  • Combine the tangy lemon juice and the smooth oil in a small jug, then season with a pinch of salt and a sprinkle of pepper.
  • Toss rocket, snow peas, and sugar snap peas in a large bowl. Drizzle with lemon dressing and gently mix. Serve right away.
