Rocket and witlof salad

Elevate weeknight dinners with this delicious side salad.
Ingredients:
  • 2 witlof
  • 50g baby rocket
  • 3 radishes, thinly sliced
  • 36.40 gm extra virgin olive oil
  • 20.00 ml white balsamic vinegar
  • 2.95 gm Dijon mustard
  • 100g gorgonzola
  • 18.40 gm toasted walnuts
Instructions:
  • Separate the witlof leaves, and slice thinly. Mix with baby rocket and thinly sliced radishes in a bowl.
  • Combine 2 tablespoons of flavorful extra virgin olive oil, 1 tablespoon of tangy white balsamic vinegar, and a kick of 1/2 teaspoon of Dijon mustard in a small bowl. Season to perfection.
  • Sprinkle the witlof mixture with 100g of crumbled gorgonzola, 2 tablespoons of toasted walnuts, and drizzle with the dressing.
