Last minute dessert elevated with irresistible Rocky Road topping.
Ingredients:
  • 250g strawberries
  • 250g raspberries
  • 49.50 gm icing sugar
  • 250g Light Spreadable Cream Cheese
  • 4.40 gm vanilla extract
  • 100g mini meringues, reserve 4-6 for decoration, break the rest into pieces
  • 200g Dairy Milk Rocky Road, roughly chopped
Instructions:
  • Halve 1/3 of the strawberries and set them aside along with 1/3 of the raspberries. Use a fork to loosely mash the rest of the strawberries and raspberries with 2 tablespoons of the icing sugar.
  • Combine the PHILLY and remaining sugar until smooth, then gently fold in the meringues.
  • In each serving glass, layer spoonfuls of the PHILLY mix, followed by the berry mixture and a third of the chopped Rocky Road. Repeat the layers and top with the remaining berries, meringue, and Rocky Road for decoration. Chill in the refrigerator for at least 30 minutes to an hour before serving.
