Party-perfect mini rocky road treats.
Ingredients:
  • 200g milk chocolate, chopped
  • 10g copha
  • 100g pink and white marshmallows, coarsely chopped
  • 50g Anzac biscuits, coarsely chopped
  • 125.00 ml toasted macadamia nuts, coarsely chopped
  • 16.25 gm shredded coconut, toasted
  • 50g red glace cherries, halved
Instructions:
  • Place non-stick paper cases in 12 mini muffin pans.
  • Combine the chocolate and copha in a heatproof bowl set over a saucepan of simmering water.
  • Use a metal spoon to stir until the chocolate has melted and the mixture is silky. Take it off the heat, and in a large bowl, combine marshmallows, biscuits, macadamia nuts, coconut, and cherries. Slowly pour the melted chocolate over the ingredients and gently mix them together.
  • Pour the mixture into the prepared pans and let it sit for at least 1 hour to firm up.
