Delicious chicken cooked with marinated artichokes, mushrooms, white wine, and capers - a flavorful dish.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 1 tablespoon butter
  • 1 (14 ounce) can marinated quartered artichoke hearts, drained, liquid reserved
  • 1 cup sliced fresh mushrooms
  • 1 cup white wine
  • 1 tablespoon capers
Instructions:
  • Season chicken generously with salt and pepper. In a large skillet over medium heat, heat oil and butter until sizzling. Sear chicken on both sides until golden brown, about 5 to 7 minutes each side. Transfer chicken to a plate and set aside.
  • Saute artichoke hearts and mushrooms until mushrooms are golden and soft. Add chicken back to the skillet, then pour in reserved artichoke liquid and wine. Simmer on low heat for 10-15 minutes until chicken is fully cooked and juices are clear.
  • Add capers to the mixture and allow it to simmer for an additional 5 minutes. Remove from heat and serve right away.
