Chardonnay chicken with olives, mushrooms, artichokes, and spices is a romantic and flavorful dish.
Ingredients:
  • 1 teaspoon salt-free garlic and herb seasoning blend (such as Mrs. Dash®)
  • 0.25 teaspoon garlic powder
  • 1 pinch ground black pepper
  • 6 boneless, skinless chicken breast tenders
  • 1 cup dry Chardonnay
  • 1 (7 ounce) can portobello mushrooms, drained
  • 1 (6 ounce) jar marinated artichoke hearts, drained
  • 1 (2.5 ounce) can black olives, drained
  • 0.5 teaspoon capers
Instructions:
  • Warm up the olive oil in a skillet over medium heat.
  • Season both sides of the chicken with a flavorful blend of salt-free seasoning, garlic powder, and black pepper. Sear the chicken in a hot skillet for 2 1/2 minutes on each side.
  • Combine Chardonnay, mushrooms, artichoke hearts, and olives in the skillet. Cook and stir until the chicken is no longer pink in the center and the juices run clear, about 7 to 10 minutes. Use an instant-read thermometer for accuracy - the temperature should reach at least 165°F (74°C) when inserted into the center.
  • Simmer the capers in the skillet over reduced heat for 3 minutes.
