Chardonnay Shrimp Spread

Elevate frozen shrimp by marinating in white wine for a sophisticated twist.
Ingredients:
  • 2 cups frozen cooked salad shrimp (about 7 oz), thawed, drained
  • 1/2 cup Chardonnay wine or nonalcoholic white wine
  • 1 package (8 oz) cream cheese, softened
  • 3 tablespoons mayonnaise or salad dressing
  • 3 medium green onions, finely chopped (3 tablespoons)
  • Bibb lettuce, if desired
  • 48 crackers
Instructions:
  • Chop the shrimp into chunky pieces and place them in a small glass bowl. Pour the wine over the shrimp and mix well to coat. Cover the bowl and let it chill in the refrigerator for at least 1 hour to enhance the flavors. Drain the shrimp, but don't discard the wine - set it aside for later use.
  • In a separate small bowl, combine cream cheese, mayonnaise, 2 tablespoons of onions, and mustard using a spoon. Gently fold in the shrimp. For a thinner texture, mix in a small amount of the reserved wine.
  • - Layer a small serving bowl with fresh Bibb lettuce leaves. - Spread the shrimp spread evenly into the bowl. - Sprinkle the remaining tablespoon of onion over the top. - Serve with a side of your favorite crackers.
