Golden orbs reveal vibrant, juicy red flesh with a delicious bittersweet flavor.
Ingredients:
  • 400ml fresh ruby red grapefruit juice
  • 500ml (2 cups) sparkling rose wine
  • 24.00 gm gelatine powder
  • 3 ruby red grapefruit, segmented
Instructions:
  • Simmer grapefruit juice in a saucepan until just bubbling, then mix in the sparkling rose.
  • In a small heatproof jug, combine the gelatine with 125ml (1/2 cup) of the grapefruit mixture. Whisk with a fork until the gelatine dissolves. Then, stir the gelatine mixture into the remaining grapefruit mixture until well combined.
  • Distribute grapefruit segments evenly into six 185ml (3/4-cup) serving glasses. Pour the sparkling rose mixture over the segments. Chill in the fridge for 4 hours until set.
