Elevate your bread game with homemade focaccia for the ultimate toastie experience!
Ingredients:
  • Olive oil, to grease
  • 2 tsp (7g/1 sachet) dried yeast
  • 250ml (1 cup) warm water
  • 450g (3 cups) plain flour
  • 1 tsp bread improver
  • 1.20 gm salt
  • Plain flour, to dust
  • 20.00 ml fresh rosemary leaves
  • 2.40 gm sea salt flakes
Instructions:
  • Lightly coat a 23 x 33cm roasting pan with oil. In a bowl, mix yeast and water together. Let sit in a warm, draft-free spot for 10 minutes until foamy.
  • In a large bowl, sift the flour, bread improver, and salt. Create a well in the center and add the yeast mixture and extra virgin olive oil. Mix with a wooden spoon until combined, then use your hands to form the dough in the bowl.
  • Transfer the dough to a lightly floured surface and knead for 10-15 minutes until it becomes smooth and elastic. Grease a large bowl with oil and place the dough in it, turning to coat it in oil. Cover with plastic wrap or a damp tea towel and let it rest in a warm, draft-free spot for about 1 hour until the dough doubles in size.
  • Preheat the oven to 200°C. Using your fist, punch down the center of the dough. Transfer the dough to a lightly floured surface and knead for 2-3 minutes until smooth and elastic, and the dough is back to its original size. Roll out the dough into a 23 x 33cm rectangle using a rolling pin. Place the dough in the prepared pan, pressing it into the sides to fit. Brush the dough with a little oil. Let it rest in a warm, draft-free place for 30 minutes until doubled in height.
  • Press dimples into the dough with your fingertips, then brush with oil and sprinkle evenly with fragrant rosemary and flakes of sea salt. Bake in a preheated oven for 20 minutes or until beautifully golden brown and perfectly cooked. Once done, take out of the oven and transfer to a wire rack to cool. Enjoy this savory treat warm or at room temperature.
