Indulgent mashed potatoes infused with savory chicken broth and rich olive oil.
Ingredients:
  • 6 medium Yukon gold potatoes (2 lb)
  • 1/3 to 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 1/4 cup olive or vegetable oil
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried rosemary leaves, crumbled
  • 1 cup shredded Parmesan cheese (4 oz)
Instructions:
  • In a 2-quart saucepan, place the potatoes and add enough water to cover them. Bring to a boil, then simmer covered for 20-30 minutes until the potatoes are tender. Drain and shake the pan over low heat to dry the potatoes for fluffier mashed potatoes.
  • Mash potatoes in a pan until completely smooth. Gradually add broth, mashing well after each addition until desired creamy consistency is reached.
  • Drizzle with oil, add fresh rosemary, a pinch of salt, and grated cheese. Mash energetically until potatoes are airy and tender. Cover and allow to sit for 5 minutes. For extra flavor, garnish with more rosemary and Parmesan cheese.
