Rotini pasta, grilled chicken, Parmesan, and parsley make a delicious and satisfying salad.
Ingredients:
  • 1 (6 ounce) skinless, boneless chicken breast
  • 0.5 (16 ounce) package rotini pasta
  • 0.5 cup chopped celery
  • 0.5 cup grated Parmesan cheese
  • 2 green onions, sliced
  • 1 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tablespoons milk
  • 0.25 cup chopped fresh parsley
  • 1 teaspoon dried basil
  • 0.25 teaspoon dried thyme
  • 1 cup frozen peas, thawed
  • salt and pepper to taste
Instructions:
  • Fill a pot with lightly-salted water and bring to a boil. Cook the chicken breast in the boiling water for 10 minutes until fully cooked. Use a meat thermometer to ensure the center reaches 165 degrees F (74 degrees C). Once cooked, cut the breast into cubes and chill in the refrigerator for 1 hour until cold.
  • Fill a pot with lightly-salted water and bring to a boil. Add the pasta and cook until al dente, about 8 minutes. Drain and rinse with cold water to cool.
  • Combine the celery, Parmesan cheese, green onions, mayonnaise, sour cream, milk, parsley, basil, and thyme in a large bowl. Gently mix in the chicken, rotini, and peas. Season with salt and pepper. Chill in the refrigerator for 1 hour before serving.
