Lemony garlic pasta with broccoli - a quick, tasty delight!
Ingredients:
  • 1.5 cups chopped fresh broccoli
  • 1 (16 ounce) package uncooked rotini pasta
  • 0.5 cup olive oil
  • 4 cloves garlic, chopped
  • 1 pinch crushed red pepper flakes
  • 1 cup chicken broth
  • 0.5 cup lemon juice
  • salt and ground black pepper to taste
  • 0.25 cup freshly grated Parmesan cheese
Instructions:
  • In a large pot, bring salted water to a rolling boil. Add broccoli and cook for 3 minutes. Remove broccoli with a slotted spoon and set aside. Cook rotini in the same pot until al dente, about 8 minutes. Drain and enjoy!
  • In a skillet over medium heat, sauté garlic and crushed red pepper in olive oil for 1 minute. Add broccoli, chicken broth, lemon juice, salt, and black pepper. Bring to a boil, then simmer until broccoli is tender, about 5 minutes. Mix in drained pasta and cook for 1 minute over low heat. Finish by stirring in Parmesan cheese.
