Elevate rocky road with vibrant pink ruby chocolate, edible flowers, pistachios, almonds, and marshmallows for a luxurious twist.
Ingredients:
  • 14 ounces ruby chocolate, chopped
  • 0.5 cup coconut oil
  • 1 teaspoon vanilla extract
  • 18 shortbread cookies (such as Walkers®), coarsely chopped
  • 0.5 (10 ounce) package marshmallows, cut into cubes
  • 0.5 cup shelled pistachio nuts
  • 0.5 cup slivered almonds
  • 1.5 ounces candied flowers
  • 3 tablespoons freeze-dried raspberries
  • 3 tablespoons coconut flakes
Instructions:
  • Prepare a small baking sheet by greasing it and placing waxed paper on the bottom.
  • In a large microwave-safe bowl, combine ruby chocolate, coconut oil, and vanilla extract. Microwave on high for about 1 1/2 minutes until melted. Stir energetically with a silicone spatula, ensuring any solid chocolate pieces are fully melted into the mixture.
  • Combine shortbread cookies, marshmallows, pistachios, almonds, candied flowers, raspberries, and coconut flakes with the chocolate mixture, stirring gently until everything is fully coated.
  • Smooth the mixture onto the prepared baking sheet and chill until solid, approximately 1 to 2 hours. Slice into squares with a sharp knife.
