Top each coconut macaroon with a maraschino cherry to create a festive 'Rudolph' nose for the holidays.
Ingredients:
  • 4 egg whites
  • 1 cup white sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 3 cups shredded coconut
  • 12 maraschino cherries, halved
Instructions:
  • First, preheat your oven to a toasty 325 degrees F (165 degrees C). Then, elegantly line your baking sheets with waxed paper.
  • In a glass or metal bowl, whisk egg whites until foamy. Gradually add sugar while continuing to whisk until stiff peaks form, creating sharp peaks when lifting the whisk straight up.
  • Mix the cocoa powder, vanilla extract, and salt into the egg white mixture until combined; gently stir in the coconut. Use a spoon to drop dollops of the coconut mixture onto the baking sheets.
  • Bake until coconut turns golden brown, approximately 20 minutes in the preheated oven.
  • Place a cherry half gently on top of each macaroon and then transfer the cookies to a cooling rack.
