Festive reindeer cupcakes for Christmas, decorated with kids adding Rudolph's red candy nose.
Ingredients:
  • 9 tablespoons unsalted butter, room temperature
  • 0.75 cup white sugar
  • 1 teaspoon vanilla extract
  • 1.5 cups sifted self-rising flour
  • 0.5 cup milk
  • 1 cup confectioners' sugar
  • 1 tablespoon unsalted butter, room temperature
  • 1 drop brown food coloring
  • 6 vanilla wafer cookies (such as Nilla®)
  • 12 red jelly beans
  • 24 candy eyeballs
  • 24 chewy chocolate-flavored candy (such as Tootsie Roll®)
  • 24 pretzels
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing it or lining the cups with paper liners.
  • In a large bowl, cream together 9 tablespoons of butter, white sugar, and vanilla extract using an electric mixer until smooth. Mix in the eggs one at a time until fully incorporated. Alternate adding half of the flour and 1/4 cup milk, stirring until combined. Repeat with the remaining flour and milk. Fill the muffin cups 3/4 full with the batter.
  • Bake in the preheated oven for about 18 minutes, or until a toothpick inserted in the center comes out clean.
  • Take the tin out of the oven and let it cool on a wire rack for 5 minutes. Then, transfer the cupcakes from the tin to a wire rack and let them cool completely before decorating, approximately 1 hour.
  • In a large bowl, whip together powdered sugar, 1 tablespoon of butter, and 1 tablespoon of milk using an electric mixer until creamy. If needed, adjust the frosting's consistency by adding a splash of milk or water. Stir in food coloring until the frosting turns an even brown hue. For a personalized color, incorporate additional food coloring one drop at a time until the desired shade is achieved.
  • Frost the tops of the cupcakes and add half a vanilla cookie as a mouth on each cupcake. Attach a jelly bean for Rudolph's nose with a dab of frosting. Add 2 candy eyeballs to each cupcake. Create antlers by breaking pretzels and attaching 2 pieces to the top of each cupcake. Shape chewy candies into ears and attach 2 to the sides of each cupcake.
