Runner beans, goat’s cheese & walnuts on sourdough

Ingredients:
  • 150 g runner beans
  • 2 spring onions
  • 1 tablespoon walnuts
  • olive oil
  • 4 slices sourdough bread
  • 50 g goat's cheese
  • extra virgin olive oil
Instructions:
  • Prepare the beans and spring onions by trimming and finely slicing them. Toast the walnuts lightly in a dry pan, then finely chop them after removing. In the same pan, heat 1 tablespoon of olive oil and stir in the runner beans and spring onions. Sauté for 4 minutes or until tender. Toast the sourdough bread. Season the beans and spring onions, then spoon them onto the toast. Crumble the goat's cheese on top, followed by the walnuts, and finish with a drizzle of extra virgin olive oil.
