Russian Ant Hill Cake

Create a playful Russian ant hill cake the whole family can enjoy making together.
Ingredients:
  • 0.75 cup unsalted butter, melted
  • 2 tablespoons unsalted butter, melted
  • 4 ounces sour cream
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.75 cup unsalted butter, softened
  • 2 tablespoons unsalted butter, softened
  • 1 (13.4 ounce) can dulce de leche
  • 2 tablespoons poppy seeds, for sprinkling
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and liberally grease a baking sheet.
  • Mix together 3/4 cup plus 2 tablespoons of melted butter and sugar until well combined. Stir in sour cream until smooth. Fold in flour and baking powder, then knead into a smooth, stiff dough.
  • Feed handfuls of the dough through the meat grinder attachment of your KitchenAid. Evenly scatter the ground dough pieces over the prepared baking sheet.
  • Bake in the oven until lightly browned, approximately 15 minutes, then cool.
  • In a bowl, use an electric mixer to whip 3/4 cup plus 2 tablespoons of softened butter until smooth. Blend in dulce de leche until fully incorporated. Gently fold in cooled cake pieces with a spatula until evenly combined.
  • Shape the mixture into an ant hill on a serving plate using buttered hands and sprinkle with poppy seeds.
