Tender chicken thighs with veggies and Italian seasoning, slow cooked for an effortless meal that's ready when you return home.
Ingredients:
  • 2 pounds boneless skinless chicken thighs
  • 2 large carrots, cut into 1/2-inch slices
  • 1 medium red bell pepper, chopped
  • 1 cup sliced fresh mushrooms
  • 4 garlic cloves, minced
  • 2 tablespoons Italian seasoning
  • Salt and black pepper to taste
  • 1 (14.5 ounce) can RED GOLD® Diced Tomatoes
  • 1 (28 ounce) can RED GOLD® Crushed Tomatoes
  • 3 cups penne pasta, cooked and drained
Instructions:
  • Lightly coat the slow cooker with cooking spray. Add chicken to the slow cooker and sprinkle with all ingredients except pasta and garnish.
  • Cook on LOW for 6 to 8 hours, then serve the tender chicken over pasta, and top it off with a generous sprinkle of cheese and fresh parsley for a delightful finish.
  • Top with a sprinkle of Parmesan cheese and a handful of chopped fresh Italian parsley for a flavorful finishing touch.
