Enhance this delicious rutabaga and carrot side dish with savory bacon.
Ingredients:
  • 2 rutabagas (about 1 lb), peeled, cut into 1-inch cubes
  • 4 large carrots (about 3/4 lb), cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 cup butter
  • 1 large sweet onion, thinly sliced, slices cut in half
  • 1/4 cup whipping cream
  • 1/2 teaspoon freshly ground pepper
  • 5 slices thick-sliced bacon, crisply cooked, crumbled (1/3 cup)
  • Fresh rosemary sprig, if desired
Instructions:
  • Place rutabagas and carrots in a 3-quart Dutch oven and cover with water. Add 1/2 teaspoon of salt. Bring to a boil, then simmer covered on low heat for 30 to 35 minutes until tender. Drain before serving.
  • In a 12-inch nonstick skillet over medium heat, melt 1/4 cup of butter. Cook the onion in the butter for 25 minutes, stirring occasionally, until very tender.
  • Combine mashed rutabagas and carrots with onion, whipping cream, pepper, remaining butter, and salt in a large bowl until smooth. Top with crispy bacon and a sprig of fresh rosemary for a flavorful finish.
