Ingredients:
  • 4 taco shells
  • 1 small carrot, peeled, coarsely grated
  • 70g (2/3 cup) cheddar,coarsely grated
  • 100g grape tomatoes, halved
  • 1/2 avocado, peeled, coarsely chopped
  • 4 butter lettuce leaves
Instructions:
  • First, warm the taco shells according to the package instructions. Let them cool for a bit. In a bowl, mix together carrot, cheddar cheese, grape tomatoes, and avocado. Line the taco shells with lettuce leaves, then spoon the carrot mixture into each shell. Serve and enjoy!
