Try this versatile salami recipe that can easily transform into flavorful pepperoni with added spices.
Ingredients:
  • 2 pounds ground beef
  • 0.5 teaspoon coarsely ground black pepper
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon ground mustard seed
  • 2 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
Instructions:
  • Combine ground beef, black pepper, garlic, mustard seed, and curing salt in a large bowl until fully mixed. Shape mixture into 2 or 4 rolls, wrap them in aluminum foil, and refrigerate for 24 hours.
  • Boil a large pot of water. Add the wrapped rolls and simmer for 1 hour over medium-low heat. Carefully remove, poke holes in the foil to drain, and let cool.
  • Uncover and wrap with fresh aluminum foil. Chill in the refrigerator until completely cold, approximately 3 hours. Slice and enjoy in sandwiches, on crackers, in salads, or as a tasty snack.
