Salmon, lemon and herb skewers

Prepare quick and flavorful salmon skewers with zesty lemon and fresh herbs for a speedy dinner option.
Ingredients:
  • 800g skinless boneless salmon fillets
  • 3 small lemons, thinly sliced
  • 250.00 ml fresh flat-leaf parsley leaves
  • 62.50 ml fresh dill leaves
  • 62.50 ml fresh mint leaves
  • 2 green onions, finely chopped
  • 1 garlic clove
  • 42.00 gm lemon juice
  • 75.08 gm extra virgin olive oil
  • 20.00 ml drained baby capers
  • Crusty bread, to serve
  • 2 ruby red grapefruits, peeled
  • 1 small fennel, thinly sliced
  • 100g red leaf salad mix
Instructions:
  • Thread salmon and lemon alternately onto skewers, starting and ending with salmon, to make a total of 8 skewers.
  • In a small food processor, combine parsley, dill, mint, onion, and garlic. Pulse until finely chopped. Transfer to a bowl and mix in lemon juice, oil, capers, salt, and pepper. Stir well to combine.
  • Preheat a greased barbecue grill or hotplate over medium heat. Brush skewers with one-third of the herb mixture, ensuring they are evenly coated. Grill skewers, turning occasionally, for 2 to 3 minutes for medium doneness, or until cooked to your preference.
  • Prepare the fennel and grapefruit salad. Cut the grapefruit into segments over a bowl to save the juice. Combine the segments with fennel and salad leaves in the bowl. Season with salt and pepper, then mix everything together.
  • Drizzle the skewers generously with the flavorful herb mixture. Pair them elegantly with a side of crisp salad and warm, fresh bread.
