Pink salmon shines on a vibrant seasonal salad.
Ingredients:
  • 1 bunch asparagus, ends trimmed
  • 200g roasted salmon fillet, flaked
  • 150g baby spinach leaves
  • 1 avocado, flesh sliced
  • 42.00 gm lime juice
  • 8.00 gm brown sugar
  • Sesame seeds, to garnish
Instructions:
  • Boil asparagus for 2 minutes, then cool in cold water, drain, and pat dry.
  • In a bowl, combine olive oil, lime juice, and sugar, then season with salt and pepper to create a flavorful dressing.
  • Combine the asparagus, salmon, spinach, and avocado in a large bowl.
  • Mix the dressing into the salad and top with sesame seeds for a nutty crunch.
