Salmon and olive salad with spicy tomato dressing

Whip up a flavorful salmon and olive salad with zesty tomato dressing, no cooking needed.
Ingredients:
  • 100g mixed salad leaves
  • 125.00 ml fresh flat-leaf parsley leaves
  • 1 continental cucumber, halved lengthways, thickly sliced
  • 340g jar mixed marinated olives
  • 2 x 125g portions hot-smoked salmon
  • 40.00 gm hot tomato chutney
Instructions:
  • Place a layer of fresh salad leaves, parsley, and cucumber on a serving platter. Drain the olives, saving 1 tablespoon of the flavorful oil they were marinating in. Sprinkle the olives on top of the salad.
  • Peel off and discard salmon skin. Break salmon into pieces and add to the salad.
  • Mix together the tomato chutney, reserved marinade, and 2 tablespoons of cold water in a small bowl. Season with salt and pepper, then generously pour over the salad before serving.
