Salmon and pea pasta salad

Elevate your midweek meal with delicious salmon and walnut pesto pasta salad.
Ingredients:
  • 100g farfalle pasta
  • 50g snow peas, halved diagonally
  • 60g pea
  • 1 bunch asparagus, woody ends trimmed, cut into 5cm lengths
  • 1/2 x 185g pkt Hot Smoked Salmon Pepper Fillets, coarsely flaked
  • 60g baby rocket leaves
  • 40g baby rocket leaves
  • 125.00 ml mint leaves
  • 25g walnut
  • 1 small garlic clove, crushed
  • 40.00 ml finely grated parmesan
  • 80ml olive oil
Instructions:
  • Boil the pasta in a large saucepan as per packet instructions until al dente, then add the snow peas, peas, and asparagus for the final 2 minutes. Drain, rinse with cold water, and return to the pan.
  • Prepare the walnut & mint pesto by combining rocket, mint, walnuts, garlic, and parmesan in a food processor. Process until finely chopped. While the processor is running, stream in the oil until well combined. Season to taste.
  • Combine the salmon and rocket with half of the pesto in the pasta mixture, tossing everything together. Serve with the remaining pesto on top.
