Ingredients:
  • 600g potato
  • 415g can pink salmon, drained and flaked
  • 2 green onions, thinly sliced
  • 125.00 ml plain flour
  • 2 eggs, lightly beaten
  • 250.00 ml dry breadcrumbs
  • 123.75 gm light mayonnaise
  • 2 limes, rinds grated and juiced
  • Olive oil spray
  • 80g baby spinach leaves
  • 2 avocados, chopped
Instructions:
  • Preheat the oven to 220C. Boil potatoes until tender, then drain and roughly mash them. Mix in salmon, green onions, salt, and pepper. Shape the mixture into 8 croquettes.
  • Prepare the croquettes by dusting them in flour, dipping them into beaten egg, and covering them with breadcrumbs. Mix mayonnaise with lime zest and 1 tablespoon of lime juice.
  • Combine all salad ingredients in a bowl and gently mix with the remaining lime juice.
  • Spritz croquettes with olive oil spray and place on a baking tray. Bake until golden brown, about 20-30 minutes. Serve hot with a side of salad and zesty lime mayonnaise.
