Air fryer salmon croquettes

Crunchy air-fried croquettes with mashed potato, smoked salmon, and creamed corn filling.
Ingredients:
  • 1kg mashed potato
  • 300g hot smoked salmon, skin removed and flaked
  • ½ cup creamed corn
  • 20.00 ml chopped fresh dill
  • 250g jar Aioli
  • 41.20 gm milk
  • 150g (½ cup) plain flour
  • 50g (2 cups) panko bread crumbs
  • Lemon wedges, to serve
Instructions:
  • Mix together the mashed potato, salmon, corn, dill, and 100g of aioli until well combined. Shape the mixture into oval croquettes using a tablespoon. Place the croquettes on a tray lined with baking paper. Chill in the fridge for 30 minutes.
  • In a shallow bowl, mix egg and milk. Spread flour on a plate. Coat each croquette with flour, then dip in egg wash and roll in panko, pressing gently to coat. Air fry at 180C for about 10 minutes until crispy and golden, giving a light spray of oil before cooking.
  • Garnish with the extra aioli and lemon wedges for an added burst of flavor.
