Crispy salmon croquettes made with canned salmon, panko bread crumbs, mayo, egg, dill, and Old Bay seasoning, cooked to perfection in an air fryer.
Ingredients:
  • 1 (14.5 ounce) can salmon, drained and flaked
  • 0.75 cup panko bread crumbs
  • 0.5 cup diced onion
  • 0.33333334326744 cup mayonnaise
  • 1 large egg, beaten
  • 0.5 lemon, juiced
  • 1 teaspoon dried dill weed
  • 1 teaspoon seafood seasoning (such as Old Bay®)
  • salt and freshly ground black pepper to taste
  • avocado oil nonstick cooking spray
Instructions:
  • In a large bowl, mix together salmon, panko, onions, mayonnaise, beaten egg, lemon juice, dill, seafood seasoning, salt, and pepper until well combined. Form the mixture into 6 patties of equal size.
  • Preheat the air fryer to 400°F (200°C), then line the basket with parchment paper and give it a quick spray of avocado oil.
  • Place the salmon croquettes in the prepared basket in batches, if necessary, and generously spray the tops with avocado oil.
  • Air fry the croquettes until they are golden brown, for 8 to 10 minutes. Flip them over, spray with more avocado oil, and continue cooking for an additional 4 to 7 minutes.
