Salmon Loaf with Roasted Red Peppers

Elevate classic meatloaf with a spicy twist using canned salmon and roasted red pepper.
Ingredients:
  • 1 small onion, chopped
  • 0.5 cup roasted red peppers, drained and chopped
  • 1 (14.5 ounce) can red salmon, drained and flaked
  • 24 saltine crackers, crushed
  • 1 egg, beaten
  • 0.75 teaspoon Worcestershire sauce
  • 3 drops cayenne pepper sauce (such as Frank's® RedHot®)
  • 0.125 teaspoon cayenne pepper
  • black pepper to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • Puree onion and roasted red pepper in a blender until completely smooth; then transfer to a spacious bowl.
  • Combine the salmon, crushed saltine crackers, milk, egg, Worcestershire sauce, cayenne pepper sauce, cayenne pepper, and black pepper with the onion mixture in a large bowl, then transfer the mixture to the prepared loaf pan.
  • Bake until the center reaches at least 160°F (70°C on an instant-read thermometer, about 45 minutes.
