Whip up a quick and delicious Asian salmon stir fry using fresh or defrosted salmon and frozen veggies. Ready in minutes!
Ingredients:
  • 4 cups cooked rice
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 lb salmon filets, cut the salmon into 1-inch chunks
  • 2 cups frozen vegetables (recommended: Cascadian Farms Chinese Style Stir-Fry Blend)
  • 2 teaspoons seasoned rice vinegar
  • 1/4 cup low-sodium soy sauce (plus extra for drizzling)
Instructions:
  • Prepare fluffy and tender rice by following the package directions to yield 4 cups of cooked grains.
  • Heat a blend of flavorful olive oil and aromatic sesame oil in a large skillet over medium heat.
  • Sauté the garlic and ginger in the skillet for 1 minute while stirring constantly. Add the salmon chunks and stir occasionally, cooking for 2 to 3 minutes until partially opaque. Cover the skillet and cook for an additional 2 to 3 minutes until the salmon is opaque and flakes easily with a fork.
  • Uncover the skillet and mix in the frozen vegetables. Pour in the vinegar and soy sauce; stir thoroughly. Continue cooking for 2 to 3 minutes or until the sauce slightly thickens.
  • Enjoy your delicious meal by serving it over a bed of fluffy cooked rice and adding a touch of soy sauce for extra flavor.
