Quick and delicious broccolini stir-fry with a savory soy, honey, and garlic sauce - budget-friendly at $6.60 per serving. Ready in 20 minutes!
Ingredients:
  • 400g skinless boneless salmon fillets, cut into 4cm pieces
  • 185ml (3/4 cup) soy, honey and garlic marinade
  • 2 x 400g packet shelf fresh Singapore noodles
  • 1 bunch broccolini, stems thickly sliced diagonally, larger tops chopped
  • 2 limes, 1 juiced, 1 cut into wedges
Instructions:
  • Coat the salmon in a flavorful 60ml (1 ⁄4 cup) marinade.
  • Cook noodles according to package instructions. Drain. Spray a large deep frying pan or wok with oil and heat over medium-high heat. Stir-fry broccolini stems for 1 minute, then add broccolini tops and stir-fry for an additional minute. Transfer to a plate. Spray the wok again and stir-fry the salmon for 4-5 minutes, or until lightly browned and cooked through.
  • Pour 2 tablespoons of water into the pan to release any cooked-on marinade. Combine the noodles, broccolini, lime juice, and rest of the marinade. Mix well. Portion out the noodle mixture into bowls and top with the flavorful salmon. Offer lime wedges for a fresh citrus squeeze at the table.
