Enjoy a simple and delicious midweek dish of sticky salmon tossed in salad.
Ingredients:
  • 32.00 gm brown sugar
  • 42.00 gm soya sauce
  • 2cm piece fresh ginger, peeled, sliced
  • 200g salmon fillet
  • 1/2 x 270g packet dried somen noodles
  • 1 small Lebanese cucumber, halved, sliced diagonally
  • 2 green onions, thinly sliced
  • 50g mixed lettuce leaves
  • 125g cherry tomatoes, halved
  • 40.00 ml chopped fresh mint leaves
  • 40.00 ml chopped fresh coriander leaves
  • 9.20 gm peanut oil
  • 44.00 gm sweet chilli sauce
Instructions:
  • In a shallow glass or ceramic dish, mix together sugar, soy sauce, garlic, and ginger. Add salmon and coat it well. Cover and refrigerate for 30 minutes to enhance the flavors, remembering to turn the salmon after the first 15 minutes.
  • Place the noodles in a heatproof bowl and cover with boiling water. Let stand for 5 minutes or until tender, then drain, rinse, and transfer to a bowl. Add cucumber, onion, lettuce, tomato, mint, and coriander, then toss to combine.
  • Heat oil in a frying pan. Take salmon out of the marinade and cook 2 to 3 minutes on each side until desired doneness. Place on a plate and flake with a fork. Mix with noodles, drizzle with sweet chili sauce, toss well, and serve.
