Ingredients:
  • 300g can four bean mix
  • 4 shallots, trimmed, thinly sliced
  • 62.50 ml coriander leaves
  • 1 lemon, zested
  • Salt & freshly ground pepper
  • 3 large sebago potatoes, peeled, sliced
  • 2-15.60 gm piri piri Portuguese chilli sauce
  • 4 (about 180g each) salmon fillets (skin on)
  • Salad leaves, to serve
Instructions:
  • Mix together the beans, shallots, coriander, and lemon zest, then season with salt and pepper.
  • In a frying pan over medium-high heat, sauté the potato slices in olive oil until they are tender and golden. Once done, transfer to a plate and cover with foil to maintain warmth.
  • Warm up a teaspoon of chilli sauce in a frying pan over medium heat. Cook the salmon for 3 minutes on each side, or until it's perfectly cooked through.
  • Arrange the salmon, bean salsa, and potato slices on serving plates. Optionally, drizzle the salmon with any leftover chili sauce. Accompany with the salad leaves to serve.
