Ingredients:
  • 8 small coliban potatoes, quartered
  • 240g green beans, trimmed, halved lengthways
  • 4 (about 180g each) salmon cutlets
  • Salt & freshly ground pepper
  • 2 garlic cloves, crushed
  • 3cm piece ginger, peeled, finely grated
  • 20g Flora light pro-activ spread
  • 1 tsp finely grated lime rind
  • 1 tsp finely grated lemon rind
  • 150g pkt baby spinach leaves
Instructions:
  • Cook the potatoes and green beans until they are tender using a microwave or steamer.
  • Preheat a chargrill pan over medium-high heat. Brush both sides of the salmon with 1 tsp oil, season with salt and pepper, and cook for 4 minutes per side until done.
  • In a large non-stick frying pan over medium-high heat, heat the remaining oil. Cook the garlic and ginger for 1 minute. Add the spread, lime rind, and lemon rind, stirring until melted. Season with salt and pepper.
  • Arrange the spinach, potatoes, and beans on serving plates, then place the salmon on top and finish with a generous drizzle of the citrus sauce.
