Salsa Meatloaf

Elevate meatloaf with spicy salsa and fiber-rich cereal for a unique twist.
Ingredients:
  • 1 cup Fiber One™ original bran cereal
  • 1 cup thick & chunky salsa
  • 2 eggs
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 lb extra lean (at least 90%) ground beef
  • 1/2 cup thick & chunky salsa
Instructions:
  • Preheat the oven to 350°F. Place the cereal in a resealable food-storage plastic bag, seal it, and crush it finely using a rolling pin, meat mallet, or food processor.
  • Combine cereal and 1 cup of zesty salsa in a large bowl until well mixed. Allow the mixture to sit for 5 minutes to enhance the flavors.
  • Mix eggs, chili powder, cumin, salt, and pepper into the cereal mixture until well combined. Incorporate the ground beef and mix thoroughly. Press the mixture evenly into an ungreased 9x5-inch glass loaf dish.
  • Bake the meatloaf uncovered for 1 hour 5 minutes to 1 hour 15 minutes, or until the meat thermometer reads 160°F in the center. Let it stand covered for 5 to 10 minutes. Drain excess liquid before slicing and enjoy with 1/2 cup of salsa.
