Spice up meatloaf with salsa mixed in and topped off for extra flavor and heat control.
Ingredients:
  • 1 1/2 lb lean (at least 80%) ground beef
  • 1/2 cup Progresso™ plain bread crumbs
  • 1/2 cup thick & chunky salsa
  • 1/2 teaspoon red pepper sauce
  • 1 egg
  • 1/4 cup thick & chunky salsa
Instructions:
  • Preheat the oven to 350°F. Combine all ingredients, leaving out 1/4 cup salsa. Press the mixture into an ungreased 9x5-inch loaf pan and spread the remaining 1/4 cup salsa on top.
  • Bake for 45 to 55 minutes, or until a meat thermometer inserted in the center reads 160°F. Enjoy with extra salsa on the side, if desired.
