Spicy salsa bursting with fresh tomatoes and peppers from your garden. Adjust heat with extra jalapeno or cayenne.
Ingredients:
  • 24 pounds tomatoes
  • 1 (12 ounce) can tomato paste
  • 0.5 bunch cilantro
  • 16 jalapeno chile peppers
  • 2 medium heads garlic
  • 6 large green bell peppers, chopped
  • 6 large onions, chopped
  • 9 tablespoons salt
  • 1 cup distilled white vinegar
  • 0.5 cup brown sugar
  • 0.75 cup cornstarch
  • 0.5 cup water
Instructions:
  • Prepare the tomatoes by coring and peeling them. Scoop out the seeds and pulp, then process them in a food mill. Finally, chop the outer parts of the tomatoes.
  • In a large pot over low heat, simmer the milled liquid and tomato paste for 1 hour, or until reduced by 1/3.
  • Blend together fresh cilantro, spicy jalapeno, garlic, and 1/2 cup of tomato liquid from the pot until smooth. Gently incorporate this vibrant mixture into the pot.
  • - Mix green peppers, onions, chopped tomatoes, salt, vinegar, and brown sugar in a pot and bring to a boil. - Dissolve cornstarch in water in a small bowl and add it to the pot. - Boil and stir the mixture for about 30 minutes until vegetables are soft. - Let the mixture cool and transfer to sterile containers.
