Salsa-Chutney Chicken

Savor the delicious combination of chicken and garlic with zesty salsa topping.
Ingredients:
  • 2 tablespoons vegetable oil
  • 3 to 3 pounds cut-up broiler-fryer chicken
  • 1 garlic clove, finely chopped
  • 3/4 cup salsa
  • 1/4 cup sliced green onion (2 to 3 medium)
  • 1 jar (9 ounces) chutney (3/4 cup)
Instructions:
  • Warm up the oil in a large skillet or Dutch oven over medium heat.
  • Sear chicken in oil for about 15 minutes, rotating occasionally until golden brown all over. Lift chicken from pan with tongs.
  • Leave only 1 teaspoon of drippings in the skillet. Sauté garlic in the drippings over medium heat for about 15 seconds until golden, stirring constantly. Add the rest of the ingredients. Put chicken pieces in the skillet, skin sides up, and top with salsa mixture.
  • Simmer the chicken in the salsa mixture for about 20 minutes, spooning the sauce over the chicken occasionally, until the chicken is no longer pink in the center.
