Salt-and-pepper-crusted baked baby potatoes

Delicious bite-sized baby baked potatoes perfect for any occasion - a crowd favorite!
Ingredients:
  • 24 baby desiree or chat potatoes
  • 18.20 gm extra virgin olive oil
  • 4.80 gm sea salt flakes
  • 1 tsp coarsely ground black pepper
  • 2 slices mild pancetta
  • 75g creme fraiche
  • 20.00 ml finely chopped chives
Instructions:
  • Preheat your oven to 200°C. Spread potatoes in a roasting pan, drizzle with oil, sprinkle with salt and pepper, and toss gently until they are evenly coated.
  • Place in a beautifully preheated oven and bake until tender, usually around 20-25 minutes. Retrieve from the oven with care.
  • Heat a medium frying pan over medium heat. Cook the pancetta, turning occasionally, for 2 minutes until crisp. Set aside.
  • Score each potato with a small, sharp knife in a shallow cross shape. Press the sides of the potato gently to allow it to open up. Top each potato with a dollop of creme fraiche, then sprinkle with finely chopped pancetta and chives. Arrange on a platter and serve promptly.
