Decadent salted caramel and chocolate ganache nestled between buttery cookies for a delightful indulgence.
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.25 teaspoon Diamond Crystal® Fine Sea Salt
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 cup confectioners' sugar for rolling
  • 10 caramels (wrappers removed)
  • 0.125 teaspoon Diamond Crystal® Fine Sea Salt
  • 0.25 cup heavy whipping cream
  • 0.33333334326744 cup semisweet chocolate chips
Instructions:
  • Blend the butter and sugar until creamy. Mix in the egg and vanilla extract until well combined.
  • Combine flour, Diamond Crystal® Fine Sea Salt, baking powder, and baking soda in a bowl. Mix dry ingredients into wet ingredients until just combined. Shape the dough into 2 balls, cover with plastic wrap, and refrigerate for 1 hour.
  • Preheat the oven to 350°F and prepare a baking sheet by lining it with parchment paper.
  • Flatten each ball to 1/4 inch thickness on a confectioner's sugar-dusted waxed paper. Use a 1 1/2-inch cookie cutter to cut out circles or shapes and transfer them to a baking sheet. Return dough to the refrigerator if it becomes too soft while rolling.
  • Bake the cookies for 5 to 7 minutes until golden. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • For the Salted Caramel Filling: Unwrap the caramels and place them in a microwave-safe glass measuring cup. Add Diamond Crystal® Fine Sea Salt and heavy whipping cream. Microwave in 20-second intervals for about 1 minute, stirring after each interval.
  • For a luscious chocolate ganache, heat 1/4 cup of heavy cream in the microwave until it bubbles for about 25-30 seconds. Next, stir in chocolate chips and rest for 2 minutes before stirring until smooth.
  • Spread a tantalizing layer of caramel and rich chocolate ganache on half of the cookies, then elegantly sandwich them with the remaining cookies to create delicious sandwich cookies.
