Salted caramel fudge

Ingredients:
  • 600 g sugar
  • 250 ml double cream
  • 50 g unsalted butter
  • sea salt
Instructions:
  • Caramelize 200g of sugar until golden in a pan over medium heat. Add in 400g more sugar, double cream, butter, and 1 teaspoon of sea salt. Stir and heat until it reaches 118ºC on a candy thermometer. Remove from heat and beat until thick. Spread the mixture into a 20cm x 20cm tin and let it cool. Chill in the fridge for 2 to 3 hours to set. Sprinkle with a pinch of sea salt, cut into squares, and serve.
