Indulgent salted caramel fudge - ideal for holiday gifting (if you can resist keeping it all to yourself!)
Ingredients:
  • 125g butter
  • 397g can sweetened condensed milk
  • 220g brown sugar
  • 55.60 gm glucose syrup
  • 53.60 gm golden syrup
  • 200g white chocolate, chopped
  • 0.60 gm sea salt flakes
  • Sea salt flakes, extra, to sprinkle
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining it with baking paper, ensuring the paper overhangs the sides.
  • Combine condensed milk, sugar, butter, glucose syrup, and golden syrup in a saucepan over low heat. Stir and occasionally brush down the sides with a wet pastry brush for 10 minutes until the sugar dissolves completely.
  • Turn up the heat to medium-high and continuously stir the mixture for 8-10 minutes until it thickens and pulls away from the pan's sides. Take it off the heat, mix in the chocolate and salt until smooth. Pour the mixture into the pan, sprinkle with extra salt, and let it set for 1 hour. Transfer onto a clean surface, cut into pieces, and store in an airtight container at room temperature for up to 3 weeks.
