1940s salted peanut cookie recipe enhanced with oats and corn flakes for a modern twist on a classic favorite.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup shortening
  • 2 large eggs
  • 2 cups rolled oats
  • 1 cup cornflakes cereal
  • 1 cup Spanish peanuts
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • Combine flour, baking soda, and baking powder in a medium bowl, sifting them together.
  • In a large bowl, use an electric mixer to blend white sugar, brown sugar, shortening, and eggs until smooth. Slowly incorporate the flour mixture on low speed until combined. Gently fold in oats, cornflakes, and peanuts by hand.
  • Spoon dough onto ungreased cookie sheets, spacing 2 inches apart. Flatten each cookie using the bottom of a glass.
  • Bake until edges turn golden, about 12 to 15 minutes in the preheated oven. Let cool on the baking sheet for 1 to 2 minutes, then transfer to a wire rack to cool completely.
