Salty peanut cookies made with self-rising flour for a perfect balance of flavors.
Ingredients:
  • 1 cup shortening
  • 1.5 cups packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 2 cups salted peanuts
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • In a large bowl, cream together shortening, brown sugar, eggs, and vanilla until light and fluffy, for about 3 to 4 minutes. In a separate bowl, sift flour, then blend in baking soda and salt. Combine the flour mixture into the egg mixture and stir in peanuts.
  • Place heaping teaspoons of dough on a lightly greased baking sheet, spacing them about 2 inches apart. Flatten the dough with the bottom of a sugar-dipped, greased glass.
  • Bake until beautifully golden, about 8 to 10 minutes in the preheated oven.
