Decadent Samoa cookie bars with the same irresistible flavors as the classic treat.
Ingredients:
  • cooking spray
  • 1.5 cups flour
  • 1 tablespoon cornstarch
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup butter, softened
  • 0.25 cup white sugar
  • 0.25 cup packed brown sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 (13.4 ounce) can dulce de leche
  • 3 tablespoons milk
  • 1 (14 ounce) package sweetened flaked coconut
  • 1 (12 ounce) bag semisweet chocolate chips, divided
Instructions:
  • Preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with foil, making sure to extend the foil over the edges, and then coat the foil with cooking spray.
  • Combine flour, cornstarch, baking powder, and salt in a small bowl to make the crust.
  • In a large bowl, use an electric mixer to beat butter at medium speed for 30 seconds until smooth. Add both sugars and beat at medium-high speed until light and fluffy. Mix in egg yolk and vanilla extract. Gently beat in the flour mixture until a crumbly dough forms. Press the dough onto the bottom of the prepared pan.
  • Place the crust in the preheated oven and bake until the edges turn a beautiful light brown, which should take about 10 to 12 minutes.
  • In a medium bowl, mix together dulce de leche, milk, and flaked coconut until well combined.
  • Sprinkle 1 1/2 cups of delicious chocolate chips over the hot crust to let them melt for 5 minutes. Spread the melted chocolate evenly over the crust, then carefully layer on the coconut mixture. Bake for an additional 10 minutes, then cool in the pan on a wire rack. Enjoy your delicious treat!
  • Melt remaining chocolate chips in the microwave, stirring halfway through, until smooth, for 30 to 45 seconds. Drizzle the melted chocolate over the coconut mixture. Chill, covered, for about 1 hour until set. Lift out the uncut cookies using foil and cut into bars.
