Ingredients:
  • 2 loaves of sliced white bread
  • Unsalted butter, to spread
  • 2 tsp finely grated lemon zest, plus 1 tbsp juice
  • 150g cream cheese, softened
  • 200g smoked salmon slices
  • 200g goat's curd* or soft goat's cheese
  • 1 telegraph cucumber
Instructions:
  • Prepare the smoked salmon filling by mixing lemon zest, juice, and cream cheese in a bowl. Season with salt and pepper. Spread butter on half of the slices from 1 loaf of bread, and spread the cream cheese mixture on the other half. Add smoked salmon on top of the cream cheese, season with pepper, and cover with the buttered bread slices. Trim the crusts off using a serrated knife and cut each sandwich into 4 triangles.
  • Butter half of the bread slices from the loaf. Spread the rest of the slices with goat's curd and season with salt and pepper. Cut the cucumber to match the bread size, slice thinly lengthwise, then place over the cheese. Top with buttered bread slices. Remove crusts and cut each sandwich into 3 fingers using a serrated knife.
