Festive strawberry Santa hat brownie bites – a delightful sweet treat.
Ingredients:
  • 125g butter, chopped
  • 200g chocolate melts
  • 110g caster sugar
  • 2 eggs, lightly beaten
  • 300g plain flour
  • 140g choc bits
  • 16 strawberries, hulled and trimmed
  • 125ml thickened cream
Instructions:
  • Preheat your oven to 180C (160C fan forced). Grease and line a 19 cm square cake pan to prep for baking.
  • In a large microwave-safe bowl, mix together butter, dark chocolate melts, and sugar. Microwave uncovered on MEDIUM (50%) for 1 minute, then stir. Continue microwaving in 30-second intervals until mixture is melted and smooth. Let cool for 2-5 minutes.
  • Combine eggs, flour, and milk chocolate bits into a smooth mixture. Pour into pan and bake for 25 minutes until just firm. Allow to cool in the pan before cutting into 16 rounds using a 4cm round cutter.
  • In a microwave-safe bowl, add the extra dark chocolate melts. Microwave on MEDIUM (50%) for 1 minute, then stir. Continue microwaving in 30-second intervals until completely melted. Use the melted chocolate to attach a strawberry, cut-side down, onto each brownie round.
  • Pipe the whipped cream onto the strawberries using a small round nozzle in a piping bag to create Santa hat pom poms and trimming.
