Adorable Santa Claus cookies with red and white icing, topped with a fluffy whipped cream beard.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1.5 cups granulated sugar
  • 1 cup butter, softened
  • 2 eggs
  • 1.5 teaspoons vanilla extract
  • 1.5 teaspoons almond extract
  • PAM® Original No-Stick Cooking Spray
  • 2 (7 ounce) pouches red decorating cookie icing
  • 2 (7 ounce) pouches white decorating cookie icing
  • 22 red candy-coated chocolate pieces
  • 44 semisweet chocolate morsels
  • Reddi-wip® Original Dairy Whipped Topping
Instructions:
  • Assemble all necessary ingredients.
  • In a medium bowl, mix together the flour, baking powder, and salt; set aside.
  • Combine sugar and butter in a large bowl and beat with an electric mixer until fluffy. Mix in eggs, vanilla, and almond extracts until well combined. Slowly add the flour mixture, beating on low speed until fully blended.
  • Divide the dough into 3 portions and wrap each tightly in plastic wrap. Refrigerate for 2 hours, or until thoroughly chilled and firm enough to handle.
  • Preheat the oven to 325°F (165°C) and generously spray baking sheets and a 5-inch Santa face cookie cutter with cooking spray; set aside.
  • Flatten dough to 1/4-inch thickness on a floured surface using a floured rolling pin. Use a cookie cutter to shape the cookies and place them on baking sheets, spaced 1-inch apart, with a metal spatula. Repeat with the rest of the dough, spraying the cutter with cooking spray as necessary.
  • Bake in the preheated oven for 7 to 10 minutes until the edges turn golden brown. Let the cookies cool on the baking sheets briefly, then transfer to a wire rack to cool completely.
  • Fill the hat with red icing, leaving the tip blank. Use white icing for the tip of the hat, the brim, the beard, and to create two eye dots on the face. Place a red candy between the eyes for the nose, and add mini morsels on the white dots for the eyes.
  • Garnish with a dollop of whipped cream before serving. Enjoy your delicious dish!
