Santa pull-apart cookies recipe

Kids will delight in assembling these cute Santa face pull-apart cookies.
Ingredients:
  • 125g butter, softened
  • 110g caster sugar
  • 1 Free Range Egg
  • 225g plain flour
  • 1 tsp vanilla bean paste
  • 1 tsp finely grated orange rind
  • 1 tsp almond extract
  • Pink liquid food colouring, to tint
  • 2 brown sugar coated chocolates
  • Red liquid food colouring, to tint
  • 2 Free Range Egg whites*
  • 10.60 gm lemon juice
  • 480g icing sugar
  • Egg white, extra
  • Lemon juice, extra
Instructions:
  • In a large bowl, use an electric mixer to combine butter, sugar, and egg until just mixed. Add flour, vanilla, orange rind, and almond extract. Mix until just combined.
  • Transfer the dough to a lightly floured surface and knead gently until smooth. Divide it into 2 portions and shape each into a disc. Cover with plastic wrap and refrigerate for 30 minutes to chill.
  • Preheat your oven to 180°C. Roll out the dough on a lightly floured surface to 3mm thickness. Cut out various shapes (moustache, rectangle, triangle, discs, squares, stars) using specified measurements from the dough, then place them on lined baking trays. Allow the shapes to cool on the trays.
  • In a large bowl, combine egg whites and lemon juice and whisk until smooth. Gradually mix in icing sugar, stirring well after each addition until a thick paste forms. Divide the mixture into 3 portions.
  • Prepare the pink icing by adding liquid food coloring to a portion of icing. Place a small amount of pink icing in a piping bag with a 1mm nozzle and pipe around the edges of the squares and disc. Mix egg white and lemon juice with the rest of the pink icing and spread it onto the center of the shapes. Attach M&M's for the eyes and allow to set.
  • For the hat, color 1 portion of icing red using liquid food coloring. Fill a piping bag with a small amount of red icing fitted with a 1mm plain nozzle. Pipe along the edges of the triangle. Mix the remaining red icing with a touch of egg white and lemon juice. Spread it from the center to the edges of the triangle. Allow it to set.
  • For the beard and hat trimmings, use the leftover icing in a piping bag with a 1mm nozzle. Pipe around the edges of the remaining biscuits. Mix extra egg white and lemon juice into the white icing. Spoon over the shapes and spread. Let it set. Decorate some white biscuits by piping white icing over them. Let it set.
