Ingredients:
  • 8 1.5cm-thick slices ciabatta bread
  • 200g low-fat ricotta
  • Salt (optional) & freshly ground black pepper
  • 2 106g cans sardines in spring water, drained, halved lengthways
  • 62.50 ml chopped fresh continental parsley
  • 40.00 ml pine nuts, roughly chopped
  • 20.00 ml drained capers, rinsed, drained, chopped
  • 2 small garlic cloves, finely chopped
  • 1 tsp finely grated lemon rind
Instructions:
  • Preheat the grill to medium-high. Toast the bread on each side under the grill for 1 minute, or until golden. Transfer the toasted bread to a baking tray.
  • In a small bowl, mix the ricotta with salt (if using) and lots of pepper. Spread this mixture evenly over the toast and arrange the halved sardines on top in a single layer.
  • In a small bowl, blend parsley, pine nuts, capers, garlic, and lemon zest thoroughly. Sprinkle the mixture evenly over the sardines. Toast under the grill for 3 minutes or until the pine nuts are golden. Serve promptly.
